Hearty Beef and Vegetable Soup Recipe: A Comforting Classic

There's nothing quite like a warm, hearty bowl of soup to comfort you on any day. Today, I'm sharing one of my all-time favorite recipes: Beef and Vegetable Soup. Packed with tender beef pieces and an array of colorful vegetables, this soup is both nutritious and delicious. Perfect for family dinners, meal prep, or a cozy night in, this recipe is sure to become a staple in your kitchen.

Ingredients:

To make this delicious soup, you'll need the following ingredients:

  • 450g beef stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 950ml beef broth
  • 475ml water
  • 2 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, peeled and diced
  • 1 cup (150g) green beans, trimmed and cut into 2.5cm pieces
  • 1 cup (160g) frozen corn
  • 1 cup (150g) frozen peas
  • 1 can (400g) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Let's dive into the cooking process:

  1. Brown the Beef: Start by heating the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and brown it on all sides. This step locks in the flavor and gives the meat a nice sear. Once browned, remove the beef from the pot and set it aside.

  2. Sauté the Vegetables: In the same pot, add the chopped onion and sauté until it becomes translucent. This usually takes about 5 minutes. Add the minced garlic and cook for another minute until fragrant. The aroma of sautéed onions and garlic is simply irresistible!

  3. Combine Ingredients: Return the browned beef to the pot. Add the beef broth, water, sliced carrots, celery, potatoes, green beans, diced tomatoes (with their juice), thyme, basil, bay leaf, salt, and pepper. Stir everything together to combine.

  4. Simmer: Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 to 1.5 hours. This slow cooking process allows the flavors to meld together beautifully and ensures the beef becomes tender.

  5. Add Frozen Vegetables: About 10 minutes before you're ready to serve, add the frozen corn and peas. Stir them into the soup and let them cook until heated through. This step adds a burst of color and sweetness to the soup.

  6. Season and Serve: Remove the bay leaf and taste the soup. Adjust the seasoning with salt and pepper as needed. Ladle the soup into bowls and garnish with fresh chopped parsley. The vibrant green parsley not only adds a pop of color but also a fresh flavor.
